Instead of going to your neighborhood Chinese restaurant for fried rice why don’t you just get in your kitchen and make your own healthier version?

Ingredients:

  • 1 cup of frozen corn (or low sodium canned corn or fresh corn kernels work as well)
  • 1 cup of any form of frozen broccoli (whole spears, chopped, works as well)
  • 1 cup of frozen cauliflower 
  • 6 ounces of pre-cooked/shredded by hand chicken breast (I often cook three or four chicken breast during the week. It is seasoned with garlic salt, chicken breast seasoning,) pepper, thyme or whatever you have in the kitchen)
  • 2 cups of instant (I use organic) brown rice
  • 10 chopped baby carrots
  • 2 tbsp of soy sauce
  • 1 extra large egg
  • PAM Original Spray

Directions:

Defrost all of your veggies in a small bowl in the microwave for 2 minutes. Spray 30 seconds of pam in a heated pan. Add your brown rice and let it warm up for 1 minute or until slightly brown in the pan. Add your shredded chicken breast and brown slightly for 1 minute. Add all of your veggies until they are slightly browned. Spray a little more pam all over the rice, veggie and chicken mixture. Then add the two tablespoons of soy sauce. Once the mixture is throughly coated with soy sauce, crack the egg in the middle of the pan. Stir the egg into the mixture until the egg is completely cooked. 

Enjoy! Makes 3 medium servings.
