Since I have been living in Mexico, I have created some personal goals for myself.
1. Start making more art.
2. Start running again.
3. Start baking more.
4. Journal.
5. Reintroduce yoga and pilates to my exercise routine.
6. Take more road trips.
These seem like simple goals but adding these new hobbies has proved challenging especially since work is so draining. But everyday I try to do a little bit of this and a little bit of that.
Last night I develved into the wonder world of baking!

Recipe: Chocolate Yogurt Pie
Ingredients
Instructions
Combine the yogurt, eggs and sugar in a large bowl.
Add vanilla, cornstarch, and salt and mix well.
Pour mixture into a ready-made Graham Cracker shell.
Bake for 45-55 minutes, until the filling is set, the edges are slightly brown.
The middle of the pie will still be a little jiggly but that is okay.
Chill in the fridge immedately and let set for 2 hours before serving.
Boom. This pie is so easy. Pumpkin bread is next on my list!
