Two weeks ago, I went to Los Angeles for a wedding with my boyfriend. During our free time we went on a date and I picked the restaurant. I wanted to try some local fare but all I could find were chain restaurants. One of my favorite chains is California Pizza Kitchen.  They just introduced a delicious Caramelized Peach Salad that I could not stop talking about. As soon as I flew back home, I new I had to recreate the salad.

The CPK salad features: Field greens, spinach, warm caramelized peaches, dried cranberries, red onions, toasted pecans, and Gorgonzola tossed in white balsamic vinaigrette. 

Doesn’t it look good as hell?! I didn’t have all the ingredients so I improvised.

 

Ingredients:

  • 2 medium peaches
  • 2 Tbsp. Vinaigrette of your choice (I used Kraft Raspberry Lite)
  • 1/4 cup dried cranberries
  • 4 cups of Romaine Lettuce Mix
  • 2 cups spinach
  • 2 Tbsp. of roasted almond slivers
  • 1 green onion, sliced
  • 1 whole diced medium tomato
  • 1/3 cup blue cheese

Directions:

Peel and pit two peaches.  Dice the peaches into bite sized pieces. Place the peaches into a lightly oiled medium sauce pan until the peaches start to caramelize (turn slightly brown and mushy). In

 a large bowl add the peaches, almonds, romaine lettuce mix, diced tomatoes, blue cheese, dried cranberries, green onion, and toss with dressing until well coated.

Serve immediately. Makes 1 servings. 

Serve with warm buttered bread. You can also add grilled chicken to add more protein to the salad.
